- 2 pounds salmon fillet
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1/ 4 cup fresh parsley
- 1/ 4 teaspoon cayanne pepper, optional
- 4 slices lemon, optional
- Salt and black pepper, To Taste
Preheat oven to 400ºF.
In a bowl, whisk dijon mustard, lemon juice, garlic, parsley and salt and pepper. Brush over portioned salmon fillets and place on a parchment paper lined baking sheet. Sprinkle salmon with cayenne pepper and garnish with lemon slices, if desired.
Bake in oven for 15-20 minutes.
Remove from oven and serve with fresh veggies!
