California walnuts are roasted with harissa and honey until crunchy, then added to a cutting board with apricots, celery, chicken, herbs, mayo, and toum to get chopped into a nutty, creamy chicken salad.

ingredients

  • 1 cup California Walnuts
  • 2 tablespoons honey
  • 2 tablespoons harissa
  • 1 pound chicken (breast or thighs, seasoned and cooked to your liking), or rotisserie chicken
  • 1/2 cup harissa and honey roasted walnuts (from above)
  • 1/2 cup dried apricots
  • 3 celery stalks
  • 1/2 cup avocado oil mayonnaise
  • 1/4 cup garlic spread (toum)
  • 2 tablespoons each parsley, cilantro, mint, or herbs of choice
  • Bread or buns of choice
  • Kosher salt, to taste
  • Pickled onions (optional)

Method

  • Step 1

    Mix together the walnuts, harissa, and honey.

  • Step 2

    Spread the mixture onto a parchment-lined baking sheet.

  • Step 3

    Bake at 350°F for 10-12 minutes until golden brown.

  • Step 4

    Cool before serving or using in the chicken salad.

  • Step 5

    If using uncooked chicken, cook it on a grill or sauté until no longer pink and the juices run clear. Set aside to cool.

  • Step 6

    On a large cutting board, add half of the chicken, apricots, celery, and walnuts. Chop using a large knife until all ingredients are roughly ½ inch in size.

  • Step 7

    Add the herbs, mayonnaise, toum garlic spread, and a sprinkle of salt.

  • Step 8

    Chop and mix together using a small knife until you achieve a uniform chicken salad mixture.

  • Step 9

    Spoon the salad onto your choice of bread and top with more garlic spread, harissa, herbs, harissa and honey roasted California walnuts if desired, and pickled onions (optional). Add the top piece of bread and enjoy.
