For the Sloppy Joe's
- 2 tablespoons olive oil
- 1 small yellow onion, chopped
- 1 red bell pepper, seeded and chopped
- 3 1/2 cups cooked brown lentils
- 1 (10 ounce) can Red Gold Mild Diced Tomatoes with Green Chilies, blended
- 2 tablespoons Red Gold Roasted Garlic Tomato Paste
- 2 teaspoons grated fresh ginger
- 1 teaspoon grated or minced garlic
- 1/4 cup shoyu or soy sauce
- 2 tablespoons sweet chili sauce
- 1/4 cup dark brown sugar
- 1/2 teaspoon toasted sesame oil
- 8 brioche buns
- Mayonnaise (optional), for topping
- Slaw (below), for topping

For the Slaw
- 1 (8 ounce) bag slaw mix
- 1 teaspoon granulated sugar
- 1 tablespoon rice vinegar
- 1/2 teaspoon kosher salt, adjusted to taste
- 1 tablespoon chili crunch, adjusted to taste
- 1/4 cup fresh chopped herbs such as cilantro, mint, or basil (optional)
Method
Step 1
Prepare lentils as instructed on the package or rinse and drain if using pre-cooked lentils, and set aside.
Step 2
Heat the olive oil in a large skillet.
Step 3
Add the chopped onion and red bell pepper. Sauté for a few minutes until the onion is translucent.
Step 4
Add garlic and ginger. Cook for another 1-2 minutes.
Step 5
Add the blended diced tomatoes with green chilies, garlic paste, shoyu, sweet chili sauce, brown sugar, and sesame oil.
Step 6
Simmer covered for 5 minutes, then add lentils.
Step 7
Simmer for another 3-5 minutes until the Sloppy Joe mixture comes together and the flavors have melded.
Step 8
Adjust seasoning to taste.
Step 9
Mix together the ingredients for the slaw and adjust seasoning as necessary.
Step 10
Assemble Sloppy Joe’s on brioche buns with the prepared slaw and optional mayonnaise.
