- 1 sheet of frozen puff pastry, thawed
- 1/2 cup granulated sugar, plus extra for sprinkling
- 1 teaspoon ground cinnamon (optional)
Method
Step 1
Line your work surface with a piece of parchment paper. Sprinkle a handful of sugar evenly over the parchment to prevent sticking and add sweetness to the bottom of the pastry.
Step 2
Lay the thawed puff pastry on top of the sugar layer. Sprinkle another even layer of sugar on top of the pastry, about ¼ cup. If desired, mix in cinnamon with the sugar for added flavor. *Note: For 18 palmier cookies, your puff pastry should ideally be rolled out into a rectangle about 10 inches by 12 inches. Most store-bought puff pastry sheets are close to this size when thawed, but if yours is smaller, you may need to roll it out a bit.
Step 3
Fold the outer edges of the puff pastry inward so they meet in the center.

Fold again, bringing the folded edges to meet in the middle.

Finally, fold one half over the other, creating a compact log shape. You should have several layers folded into each other.
Step 6
Using a sharp knife, slice the pastry into ½-inch thick pieces, yielding about 18 cookies.

Place the sliced palmiers on a parchment-lined baking sheet, leaving space between each one. Bake at 400°F for 15 minutes or until golden brown and crispy.

Allow the cookies to cool slightly on the baking sheet before transferring them to a wire rack. Sprinkle a bit more sugar on top if desired.

Store cooled palmiers in an airtight container at room temperature for up to 3-4 days. For longer storage, freeze them for up to 1 month. To re-crisp, warm them in the oven at 350°F for 5-7 minutes.
