ingredients
- kosher salt
- 1 pound pasta of choice
- 1 summer squash, cubed
- 1 zucchini, cubed
- 1 orange bell pepper, cubed
- 2 cups purple cauliflower, chopped
- 2 tablespoons fresh chives, chopped
- 8 ounces cherry tomatoes, halved
- 1/2 cup Litehouse Purely Balanced Garden Ranch Greek Yogurt Dressing
Method
Step 1
Bring a large pot of salted water to a boil, add pasta and cook until al dente, drain, set aside to cool.
Step 2
Mix squash, zucchini, pepper, cauliflower, tomatoes and chives in a large bowl.
Step 3
Add cooled pasta. Fold in Litehouse Purely Balanced Garden Ranch Greek Yogurt Dressing to coat.
Step 4
Portion out into airtight containers and store in the fridge for up to four days.
