Crust:

  • 7 1/2 ounces Annie's Organic Bunny Grahams Honey Baked Snacks, one box
  • 5 tablespoons butter

Chocolate Pudding Filling:

  • 1/3 cup granulated sugar
  • 2 1/2 cups whole milk
  • 6 large egg yolks
  • 2 tablespoons cornstarch
  • 5 tablespoons unsalted butter, chopped into pieces
  • 1 pinch of salt
  • 8 ounces semi-sweet chocolate
  • 2 teaspoons vanilla extract

Cream Topping:

  • 1 cup heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 1/2 teaspoons vanilla extract

Method

For the Crust:

  • Step 1

    Preheat the oven to 350℉.

  • Step 2

    Add the graham crackers to a food processor and pulse into fine crumbs. Pour the crumbs into a bowl and add the melted butter to it. Stir it.

  • Step 3

    Take a 9-inch pie dish, pour the crumb mixture into it. Press the mixture evenly into the bottom and up the sides of the pie dish. Bake for 12 minutes. Once it is done, set it aside to cool.

For the Chocolate Pudding Filling:

  • Step 1

    Take a medium saucepan and add the milk and sugar to it. Bring the mixture to a simmer over medium heat. Whisk it frequently.

  • Step 2

    Take another bowl, add the egg yolk and cornstarch to it. Whisk it until it is smooth.

  • Step 3

    Once the saucepan mixture is simmering, take a couple of tablespoons of hot milk and add it to the yolk mixture. Whisk to temper the yolk mixture. Add a few more spoonfuls of the hot milk into the egg yolks and whisk it. Slowly add the yolk mixture to the saucepan. Whisk constantly until the mixture begins to thicken and starts to boil. (Big bubbles begin to break the surface).

  • Step 4

    Remove the pan from the heat. Add the butter, chocolate, and vanilla extract to it. Whisk it until the mixture is completely smooth.
