ingredients
- 1 cup spelt flour
- 2 teaspoons baking powder
- 1 tablespoon coconut sugar
- 1/2 teaspoon ground cinnamon
- pinch of salt
- 1 1/2 teaspoon egg replacer powder + 3 tbsp water
- 3/4 cup plant milk
- 1 tablespoon vegetable oil
- 1 teaspoon vanilla extract
Method
Step 1
In a bowl, sift together the spelt flour, baking powder, sugar, cinnamon, and salt.
Step 2
In another bowl, whisk the egg replacer & water until smooth. Whisk in the plant milk, oil, and vanilla. Pour the wet mixture into the dry and stir until combined (do not over mix).
Step 3
Heat a large nonstick pan over medium heat. Spoon 1/4 of batter into the hot pan and shape into a rough circle using the spoon. Drop more batter as your pan size will allow.
Step 4
Cook over medium heat until the edges start to brown and the top forms bubbles. Flip and cook opposite side until golden brown (2-3 minutes per side). Serve warm with your choice of toppings.
