ingredients

  • 4 small unfrozen Filets,
  • 2 inch butter slices,
  • 5 small Red Potoes,
  • 1 large Tomato,
  • 1 small Zucchini,
  • 1 small Squash,
  • 1/2 can Chick Peas (Garbanzo),
  • 1 whole Lemon,
  • Kosher or Sea Salt
  • pepper,
  • Garlic,
  • Parsley,

Method

  • Step 1

    Preheat Oven to 420 degrees and set aside unfrozen fish fillets.

  • Step 2

    Cut 4 pieces of tin foil large enough to fill ingredients. Double 2 for each person and set aside.

  • Step 3

    Layer Sliced butter, potatoes, tomato, zucchini, squash and 1/4 can of chick peas in order in middle of tinfoil

  • Step 4

    Slice lemon into two, squeeze each onto the ingredients of each pouch leaving a pinch of each half of lemon and set aside for later.

  • Step 5

    Sprinkle salt, pepper, garlic to taste and a pinch of parsley on vegetables and little bit on fish (still leave aside the fish).

  • Step 6

    Fold tinfoil to form two squares and place on cookie sheet. Place on 3rd rack in oven.

  • Step 7

    Steam for 15 minutes than take out of oven and unfold. Place 2 pieces of fish on each top, fold and put back in oven for 10 more minutes.

  • Step 8

    Check for doneness (Should be flaky and pull apart easy). Take out of oven and let stand for 5 minutes, serve and enjoy
