  • 1 block soft tofu
  • 1 1/2 cups pastry flour
  • Kosher salt, to taste
  • 1/2 teaspoon (each) optional spices (such as garlic powder, onion powder, dried oregano, cumin, smoked paprika, dried rosemary, za'atar, curry powder, chili flakes or cayenne), adjusted to taste
  • 1 tablespoon (each) optional chopped fresh herbs (such as parsley, cilanto, or dill), adjusted to taste
  • Neutral oil, for baking

Method

  • Step 1

    In a large bowl, mix the tofu and pastry flour together until a dough forms. Season with salt and any spices or herbs you like.

  • Step 2

    Divide the dough into equal portions. Roll each piece out flat to your desired thickness.

  • Step 3

    Lightly oil one side of each flatbread and place it oiled-side-down on a pizza stone or baking sheet.

  • Step 4

    Bake at 400°F for about 20 minutes, or until the flatbreads are bubbling and golden brown.

  • Step 5

    Let cool slightly before serving. Enjoy warm or at room temp.
