ingredients
Sticky Rice & Mango
- 2 ripe mangoes, sliced `
- 1 1/2 cups glutinous rice (sticky rice)
- 1/2 cup coconut milk
- 2 tablespoons granulated sugar
ingredients
Coconut Sauce
- 1/2 cup coconut milk
- 1 - 2 tablespoons granulated sugar, adjusted to taste
- 1 teaspoon cornstarch
- 2 teaspoons water
- Sesame seeds (optional), for garnish
Method
Step 1
Soak the rice: Rinse the glutinous rice thoroughly, then soak it in water overnight.
Step 2
Steam the rice: Bring a large pot of water to a simmer. Line a bamboo steamer with parchment or cheesecloth, add the drained rice, cover, and steam for 25–30 minutes until tender.
Step 3
While the rice is still hot, mix it with ½ cup coconut milk and 2 tablespoons sugar. Stir gently to combine and allow it to absorb for a few minutes.
Step 4
Make the coconut sauce: In a saucepan over medium heat, combine the remaining ½ cup coconut milk and sugar. In a separate bowl, whisk together the cornstarch and water to make a slurry, then add to the saucepan. Cook for 3–5 minutes, stirring frequently, until slightly thickened.
Step 5
Plate the sticky rice with fresh mango slices. Drizzle with warm coconut sauce and sprinkle with sesame seeds if using. Serve immediately and enjoy!
