ingredients
For the buns
- 500 gram bread flour
- 1 teaspoons salt
- 2 zested oranges
- 7 gram active dry yeast
- 300 milliliter milk
- 45 green sugar
- 1 large egg
Method
Step 1
Warm the milk and stir in the sugar and yeast, set aside for 10 minutes
Step 2
In a large mixing bowl place the flour and salt, mix both ingredients until thoroughly combined.
Step 3
Pour the milk mixture, the egg, the orange zest, and the softened butter into the flour mixture, stir thoroughly until the contents of the bowl come together as a soft dough with a wooden spoon or with the help of a stand-alone mixer.
Step 4
If using your hands, tip the dough onto a lightly floured countertop and knead five minutes or until the dough is smooth and elastic.
Step 5
Lightly oil a large bowl and place the dough inside. Cover with a damp tea towel, a place in a warm place for one hour or until the dough doubles in size.
Step 6
Line your baking tray with parchment paper.
Step 7
Roll out dough on a lightly floured workspace with a rolling pin. The rectangle should be roughly 30x20cm or 12x8in in size.
Step 8
Spread chocolate mixture over the dough and roll into a log. Cut into 12 equal pieces.
Step 9
Place your buns on the parchment paper leaving a bit of space in between them to allow them to expand.
Step 10
Place in a warm spot for 30 min.
Step 11
Preheat oven to 180°C or 350°F.
Step 12
Bake buns for 20-25 minutes or until golden brown.
Step 13
Let the buns cool before frosting them

- 2 tablespoons sugar
- 2 tablespoons cocoa powder
- 1/2 teaspoon salt
- 120 butter
- 100 gram dark chocolate
For the chocolate filling
Step 1
Place all the ingredients on top of a double boiler and melt them together.
Step 2
Set aside, and allow to cool.

- 450 green room temperature cream cheese
- 115 green softened to room temperature butter
- 1 zested and juiced blood orange
- 160 sifted powdered sugar

In a large mixing bowl combine sugar, orange zest, and orange juice.
Step 2
Mix until well combined, add butter and cream cheese and continue beating until whipped and fluffy
