ingredients
- 3 bananas, mashed
- 2 eggs
- 1/2 cup creamy peanut butter
- 1/2 cup sugar, (cane, coconut, or munkfruit)
- 1 teaspoon vanilla
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- pinch of salt
- chocolate chips, optional
Method
Step 1
Preheat oven to 350°F.
Step 2
In a bowl, whisk together mashed bananas and eggs. Add in peanut butter, sugar, vanilla and mix. Add flour, baking soda and salt and fold until combined, careful not to over mix.
Step 3
Line a loaf pan with parchment and baking spray. Pour in batter and top with chocolate chips (optional).
Step 4
Bake for 45 minutes or until cooked through.
