ingredients
For the Hummus
- 660 grams chickpeas, reserving the water (Aquafaba)
- 1 teaspoon finely grated garlic
- 6 tablespoons tahini
- 1 tablespoon olive oil
- 3/4 teaspoon salt
- 4 tablespoons fresh lemon juice
Method
Make the Hummus
Step 1
Blitz everything together in a blender.

- 400 ml freshly boiled (but not boiling hot) water
- 5 tablespoons hummus
- Olive oil, for serving
- Fresh parsley, for serving
- Sumac, for serving
- Pul biber, for serving
- Paprika, for serving
- Cumin, for serving
For the Soup
Step 1
Once you’ve poured the hummus out of the blender, add freshly boiled (but not boiling hot) water to the blender jug. Whizz up for a few seconds.
Step 2
Add the hummus you made earlier to a small saucepan (reserving the rest to actually enjoy as a hummus dip).
Step 3
Pour in the contents of the blender and whisk together until fully smooth. It should be of a pouring consistency - if it’s too thick, add a little more water; if it’s too watery, add a little more hummus.
Step 4
Heat up on the stove until it starts to boil, then serve with crunchy olive oil croutons, fresh parsley, sumac, pul biber, paprika and cumin.
