ingredients
- 4 tablespoons olive oil, divided
- 12 ounces Cascadian Farm Organic Frozen Powered By Plants Farro, Sweet Potatoes, Black Bean and Spinach (half bag)
- 2 large eggs
- 2 tablespoons hot sauce
- 2 tablespoons tahini
- 1/2 avocado, sliced
- 1/4 cup cotija cheese
- fresh herbs, for garnish
- salt, to taste
- pepper, to taste
Method
Step 1
Heat 2 tablespoons olive oil in a cast iron skillet. When glistening, add Cascadian Farm Organic Frozen Powered By Plants Farro, Sweet Potatoes, Black Bean and Spinach, stir, and cook until browned.
Step 2
While the veggies cook, heat remaining 2 tablespoons oil in a nonstick skillet. Once hot, add eggs. Cook uncovered for five minutes, or until whites set and outer edges brown. Remove from heat. Alternately, you can choose to soft boil, poach or scramble the eggs.
Step 3
Drizzle hot sauce and tahini on top of veggies. Gently slide eggs on top. Add avocado, cheese, and fresh herbs, if desired. Serve immediately seasoned with salt and pepper to taste.
