ingredients
- 8 ounces Long Noodles
- 1/2 cup Cascadian Farm Frozen Edamame
- 1/3 cup Almond Butter, smooth
- 2 tablespoon soy sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoon chili crisp
- 2 teaspoon warm water
- Salt, to taste.
- Freshly ground black pepper, to taste.
- Fresh parsley or cilantro, for garnishing (optional)
- Sesame seeds, for garnishing (optional)
Method
Step 1
Cook noodles according to package directions.
Step 2
Put frozen edamame in strainer, pour hot noodles over edamame to defrost. Run cold water over noodles until they are cool to the touch.
Step 3
In a medium mixing bowl, add almond butter, soy sauce, vinegar, chili crisp, water, salt and pepper to taste. Whisk until smooth. If sauce is too thick, slowly add more water. Add noodles and edamame, toss to coat.
Step 4
Garnish with fresh parsley or cilantro, sesame seeds and more chili crisp, if desired.
