ingredients
For the Waffles
- 3/4 cup almond milk
- 1 teaspoon lemon juice
- 1/4 cup plus 1 tablespoon all-purpose flour
- 1/4 cup plus 1 scant tablespoon whole wheat flour
- 1 teaspoon sweetener, of choice
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon cardamom
- pinch salt

For the Blueberry Topping
- 1 cup frozen blueberries
- 1 teaspoon cornstarch
- 1 teaspoon lemon juice
- 1 teaspoon sugar
Method
Step 1
To make the waffles: Heat a greased waffle iron. Combine the almond milk and lemon juice; set aside to curdle. Mix together remaining ingredients in a bowl. Whisk in the milk mixture until combined.
Step 2
Pour half the batter into the prepared waffle iron. Cook until almost no steam comes out the sides of the iron. Repeat with remaining batter.
Step 3
To make the blueberry topping: Combine all ingredients in a saucepan over medium heat. Simmer until it thickens. Serve over waffles.
