Pea, Goat Cheese & Mint Sourdough Toast
Why I love my farmers market down the street: local peas lightly cooked with scallion, aged goat cheese, mint, Zinfandel vinegar, evoo and grated pecorino on this weeks fresh #sourdough. -@maurizio

Recipe

Ingredients:

Sourdough bread, toasted (learn how to make it here)

1 pound shelling peas, shelled

1 scallion, trimmed and sliced very thin

1 lemon, halved

several mint leaves

aged or fresh goat cheese

pecorino

About 1 TBSP EVOO

1 TBSP red wine vinegar (Zinfandel if available)

Directions:

Put the shelled peas and thinly sliced scallions in a bowl with the vinegar and juice of the half lemon. Tear mint and add to peas, add salt, pepper and enough EVOO to lightly coat. Adjust seasoning to taste.
 
Spread goat cheese on toasted bread and top with pea mixture. Coarsely grate pecorino on top.
