ingredients

  • 1 (9 inch) pie crust
  • 13 plums, halved, pits removed and thinly sliced on a mandolin
  • 1 lemon, juiced
  • 1/4 cup apricot marmalade
  • 1 egg, lightly beaten with 1 tablespoon of water

Method

  • Step 1

    Roll out your shortcrust pastry and line your tart pan (use one with a removable bottom) then leave in the freezer for 15-20 minutes.

  • Step 2

    Preheat the oven to 340ºF. Mix the plum slices with lemon juice.

  • Step 3

    Blind bake tart crust for 20-30 minutes, until lightly golden. Remove from oven and let chill for 5 minutes, then brush with egg wash. Spread marmalade into bottom of the crust.

  • Step 4

    Reduce oven to 265ºF. Fold each round plum slice in quarters, then arrange on top of marmalade, standing up each until tart shell is filled. Bake for 20-25 minutes.
