ingredients

  • 1/4 cup melted coconut oil
  • 1/4 cup room temperature maple syrup
  • 2 teaspoons garam masala
  • 1 teaspoon salt
  • 1 medium butternut squash or one acorn squash

Method

  • Step 1

    Peel, clean, and core chopped up butternut squash or halve, core, and cut one medium acorn squash into 1/4” crescent moon slices.

  • Step 2

    Whisk coconut oil, maple, masala and salt in a bowl.

  • Step 3

    Thinly coat squash with the mixture.

  • Step 4

    Place squash on a flat parchment covered baking sheet and roast until slightly browned on the bottom for about 20 min
