ingredients

  • 1 1/2 cups basmati rice
  • 2 1/2 water
  • 4 tablespoons coconut oil or ghee
  • 2 tablespoons chopped fresh ginger
  • 3/4 teaspoon cumin seeds
  • 3/4 teaspoon black mustard seed (optional)
  • 3/4 teaspoon salt
  • Pinch turmeric
  • Pinch black pepper
  • 1 chopped leek
  • 3 tablespoons finely chopped cilantro
  • 5 curry leaves (optional)

Method

  • Step 1

    Soak, strain, and then cook basmati

  • Step 2

    Heat coconut oil or ghee in a pan, then add mustard and cumin seeds.

  • Step 3

    When seeds begin to pop add remaining spices along with ginger, leek, and curry leaves.

  • Step 4

    Sauté on med to low heat until ginger and leek are tender, about 3 - 5 minutes.

  • Step 5

    Add ginger and leek mixture to basmati rice along with fresh coriander.

  • Step 6

    Mix and add salt to taste.
