  • 1 pound gluten-free spaghetti, cooked according to package instructions
  • 1 zucchini, diced
  • 1 cup frozen peas
  • 1 (5–6 ounce) bag spinach
  • 1 teaspoon minced garlic
  • Juice of 1 lemon
  • 1 teaspoon honey (or agave)
  • Handful of fresh basil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Method

  • Step 1

    In a large pan with a splash of water and a lid, steam the zucchini, peas, and spinach over medium heat until soft and wilted, about 3–5 minutes.

  • Step 2

    Transfer the steamed veggies to a blender. Add garlic, lemon juice, honey or agave, basil, salt, and pepper. Blend until smooth and creamy.
