ingredients

  • 1 cup roasted potatoes
  • 2 cups radicchio, chopped
  • 2 cups arugula
  • 1 cup green beans, blanched and chopped
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 1 teaspoon maple syrup
  • pinch salt
  • 1 tablespoon hemp seeds

Method

  • Step 1

    Mix the potatoes, radicchio, arugula, green beans and cherry tomatoes in a large bowl.

  • Step 2

    In a separate bowl or jar mix the tahini, lemon juice, water, maple syrup and salt. Pour over the salad and top with hemp seeds.
