Coconut and Dragon Fruit Chocolate Truffles

ingredients

  • 3 cups dessicated or shredded coconut
  • 1/4 cup coconut oil
  • 1/4 cup coconut milk
  • 1/4 cup maple syrup
  • 1 tablespoon dragon fruit powder
  • 1 teaspoon vanilla extract
  • 1 cup roughly chopped dark chocolate
  • 1 teaspoon coconut oil

Method

  • Step 1

    Combine desiccated coconut, vanilla, melted coconut oil, maple syrup, coconut milk and dried dragon fruit in a bowl. Roll into bite-sized balls (about 1 tablespoon) and place in the fridge to chill.

  • Step 2

    Melt chocolate by adding water to a small saucepan and bring to simmer. Place a heatproof glass bowl on top of the pot, making sure the bottom of the bowl is not touching the simmering water. Add dark chocolate and extra tsp of coconut oil to the bowl and stir gently until melted and combined.

  • Step 3

    Remove truffles from fridge and line a baking tray with parchment paper. Place ball onto a fork and lower into melted chocolate. Cover completely. Lift out and let excess chocolate drip off. Place onto tray covered with baking paper and put back in the fridge to chill, until chocolate has hardened (approx. 30 minutes). Enjoy!
