ingredients
- 2 cups almond flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 3 room temperature eggs
- 1 teaspoon vanilla extract
- 3 1/2 ounces dark chocolate
Method
Step 1
Preheat oven to 175°C or 350°F. Line muffin pan with muffin liners and set aside.
Step 2
In a bowl, combine dry ingredients (almond flour, salt and baking soda).
Step 3
In a different bowl, mix wet ingredients (coconut oil, maple syrup, eggs and vanilla), fold into dry ingredients and mix together gently. Avoid overmixing. ⠀ ⠀
Step 4
Fold in the chocolate chunks and reserve some to put on top.
Step 5
Divide batter among prepared muffin pan, top with reserved chocolate chunks and bake for about 20 minutes. Let it cool for 5 to 10 minutes in the pan before removing and serving. Enjoy!
