ingredients
- 1 tablespoon coconut oil
- 1 chopped onion
- 3 sliced garlic cloves
- 1 tablespoon grated fine ginger
- 2 tablespoon red curry paste
- 1 teaspoo turmeric
- 1 can coconut milk
- 1 chopped cauliflower
- 1 can chickpeas
- 3 cups bone broth or water (add more if needed)
- 1 teaspoo salt
Method
Step 1
Heat coconut oil in a pan and add onion, garlic and ginger and sauté for a few minutes. Add curry paste and turmeric and fry for a couple more minutes. Add coconut milk and bone broth or water and wait until it starts to simmer.
Step 2
Add chopped cauliflower and chickpeas and cook for 10 minutes. Add more broth as needed, depending of the consistency that you like. Add salt and maple syrup and adjust seasoning to your taste. ⠀
Step 3
Serve over rice and garnish with herbs and coconut yogurt. Enjoy
