ingredients

  • 1 cup almond meal
  • 1 1/2 cup desiccated coconut
  • 1/2 cup dried apricots
  • 1/2 cup medjool dates
  • 1 juiced and zested lemon
  • 2 tablespoons melted coconut oil

Method

  • Step 1

    Combine almond meal, 1 cup desiccated coconut, dried apricots, medjool dates, zest and juice of 1 lemon and coconut oil into a food processor. Process until well combined and spoon into a bowl. ⠀

  • Step 2

    Roll into balls then roll in the remaining coconut. Refrigerate for one hour before serving. Enjoy
