Dough
- 260 gram whole wheat flour
- 200 gram all purpose flour
- 1 1/2 tbsp granulated sugar
- 10 gram active dry yeast
- 240 milliliter milk, warm
- 100 milliliter water
- 3 tbsp olive oil
- 2 teaspoon olive oil
Method

Step 1
To make the dough, in the bowl of a stand mixer fitted with the dough hook attachment, gently whisk the warm milk and yeast, cover lightly with a kitchen towel and let sit until foamy, about 10 minutes. Add the flours, sugar, and salt. Turn the mixer on low-medium speed and add the 3 tbsp of olive oil. Continue kneading until the dough forms a ball around the hook. If the dough is too sticky, add additional flour, 1 tbsp at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tbsp at a time.
Step 2
Grease a large bowl with the remaining 2 tsp of olive oil. Place the dough in it and cover with plastic wrap. Let rise for 90 minutes, or until it has doubled in size. Meanwhile, make the garlic coating (recipe below).
Step 3
Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Lightly flour the top of each round of dough and slice each into quarters. Press each quarter into a rectangle, then slice in half again. You should have 16 pieces of dough. Dust each piece with a little flour and shape into individual balls. Roll out each ball into a 9-inch rope and tie into a knot. Place the knots on the prepared baking sheet, covered loosely with plastic wrap, and let rise a second time for about 30 minutes.
Step 4
Meanwhile, preheat oven to 225°C. Remove the plastic wrap and brush the knots with the garlic coating and sprinkle with Parmesan cheese. Bake for 20 minutes, or until knots are golden brown and firm.
Step 5
Cool for 5 minutes, then brush the freshly baked knots with the remaining butter. Sprinkle with more Parmesan cheese and serve.

- 90 gram unsalted butter
- 6 cloves garlic, minced
- 1 tbsp Italian herbs
- 1 teaspoon dried parsley
- 1 teaspoon garlic salt
- 30 gram unsalted butter, melted
- Parmesan cheese, to taste

Step 1
Melt the butter in a small pan over medium-low heat. Add the minced garlic and simmer for 1-2 minutes, or until fragrant. Add in the Italian herbs, parsley and garlic salt and stir to combine. Cook for about 1 more minute, then remove from heat and set aside until needed.
