- 2 large eggs
- 1/3 cup granulated sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon baking powder
- 2/3 cup (150 ml) whole milk
- 4 tablespoons unsalted butter, melted
- 2 teaspoons vanilla extract
- Fresh fruit (such as cherries, berries, or stone fruits), enough to cover the bottom of the baking dish
- Powdered sugar and ice cream (optional), for serving
Method
Step 1
Preheat the oven to 350°F. Grease a 8-inch (20cm) baking dish or 3 small baking dishes (2.75-3.15 inches in diameter) with butter.
Step 2
In a medium bowl, beat the eggs and sugar together until well combined and slightly frothy. Add the flour and baking powder, then mix until smooth. Gradually whisk in the milk until the batter is smooth and lump-free.
Step 3
Stir in the melted butter until fully incorporated followed by the vanilla extract.
Step 4
Arrange the fresh fruit in the prepared baking dish(es) in an even layer. Pour the batter over the fruit, making sure it's evenly distributed.
Step 5
Place the baking dish(es) in the preheated oven. Bake small dishes for about 15 minutes and large dishes for about 30 minutes, or until the clafoutis is puffed, golden, and set in the center. The clafoutis will rise like a soufflé and then deflate as it cools.
Step 6
Let the clafoutis cool slightly before serving. Dust with powdered sugar and serve warm with a scoop of ice cream.
