ingredients

  • 1 cups rice Flour
  • 1/4 cups potato starch
  • 4 ounce melted butter
  • 2 medium fresh eggs
  • 2 teasopon stevia
  • 1/2 cup strawberry jam
  • 2 tablepsoon powdered sugar

Method

  • Step 1

    Sift the rice flour, potato starch and stevia into a large mixing bowl or the bowl of a stand mixer.

  • Step 2

    Whisk together the melted butter and eggs. Add to the flour and mix together until a smooth dough forms.

  • Step 3

    Wrap the dough in plastic wrap and chill for an hour, Cover a baking tray with parchment paper. Preheat the oven to 350° F or 180° C.

  • Step 4

    Dust a working surface with rice flour. Roll out the dough to a ¼ inch thickness. Use a circular 2 inch cookie cutter to cut out shapes. Half the shapes are for the cookie tops. Use a smaller cookie cutter to remove a hole in the center of the cookie tops.

  • Step 5

    Place the dough shapes on the lined baking sheet. Chill for 20 minutes before baking.

  • Step 6

    Bake in the preheated oven at 350° F for 10-12 minutes until just starting to darken. Remove from the oven to cool at room temperature.

  • Step 7

    Add a teaspoon of jam to the center of each cookie base. Top with the cookie half with a hole. Squeeze gently. Assemble all the remaining cookies.

  • Step 8

    Dust the tops with powdered sugar if desired.
