ingredients
- 5 cups cooked Noodles or Pasta
- 1/2 cup frozen peas
- 1/2 cup sliced bell pepper
- 1/2 cup chopped green onion
- 1/2 cup chopped carrot
- 1/2 cup shredded cabbage
- 1/4 cup Roasted cashews
- 1/2 cup chopped cilantro
- 1/2 cup fresh thai peanut sauce
- 1/4 cups Roasted peanuts
- 1 tabelspoons fresh lime juice
- 1/8 cup Roasted sesame
Method
Step 1
Cook the pasta until al dente. Toss the cooked pasta in olive oil and add a couple of pinch of salt and black pepper. Set it aside.
Step 2
Now, gather all the ingredients for the Thai peanut dressing. It’s super easy to make, just combine all the ingredients and whisk it until it’s creamy. Add a few tablespoons of water if required.
Step 3
Now take a deep bowl, add cooked pasta, bell pepper, peanuts, carrot, shredded cabbage, and fresh herbs like cilantro, mint, or parsley. Drizzle half Thai peanut dressing over it and toss perfectly to combine.
Step 4
Drizzle some more peanuts sauce and add some roasted sesame seeds, & peanuts for extra crunch. And finish with a dash of lime juice, and enjoy!
