ingredients

  • 2 shallots, finely diced
  • 5 garlic cloves, diced
  • 2 medium carrots, diced
  • 2 celery stalks, sliced
  • 1 (400 gram) can chickpeas, drained and rinsed
  • 1/2 cup uncooked orzo pasta
  • 5 cups vegetable stock
  • 2 teaspoons dried Italian seasoning (or any dried herb blend)
  • 1 teaspoon chili flakes
  • Fresh chives, chopped
  • Juice of 1 lemon
  • Chili oil, for finishing
  • Olive oil, for sauteing

Method

  • Step 1

    Heat a drizzle of olive oil in a large pot over medium heat. Add shallots, garlic, carrots, and celery. Sauté for 4–5 minutes until softened and fragrant.

  • Step 2

    Push the veggies to one side, add a bit more oil, then add the orzo. Toast for 2–3 minutes, stirring often, until lightly golden.

  • Step 3

    Stir in the dried herbs and chili flakes.

  • Step 4

    Add the chickpeas and pour in the vegetable stock. Simmer gently for 8–10 minutes, stirring occasionally, until the orzo is tender.

  • Step 5

    Finish with lemon juice, salt, pepper, and a drizzle of chili oil.

  • Step 6

    Serve hot, topped with fresh chives and extra chili oil.

  • Step 7

    For a creamier texture, mash some of the chickpeas in the pot before serving.
