The great thing about holidays is that you have time to visit some of your fave Instagram cafes. This awesome breakfast this morning thanks to @rustica_hq - greens & seeds, so clean & delicious ???
Why would you not eat the rainbow🌈it is so beautiful & delicious😍🌿💚 This abundance of vegetables consisted of silverbeet(fresh from my garden-chopped, Capsicum, broccoli, tomatoes, red onion + beans - all thrown into a baking dish, tossed with salt & pepper, a good drizzle of olive oil, dash of balsamic vinegar, a few cloves of garlic & a good sprinkle of fennel seeds. Toss to mix well, pop into a preheated oven - 200degC, cook for 30-35mins or until tomatoes have caramelised. A perfect side dish to any meat, would be delish with mashed potato too, the juices are Y-U-M😍 A great mix for kids to try as their is so much flavour!!
Have you ever made Kale Chips❓ It did take me a while to find a combo that came out the oven tasty & crispy, today I will share you my secret recipe🙌👏because I know there are millions of people right now trying to get healthy👊 Give this a go & tell me what you think💚🌿 INGREDIENTS: ▪️3-4 kale stalks, leaves stripped off stalks & rinsed ▪️1/2 Lemon ▪️good pinch pink Himalayan salt ▪️light dust of paprika METHOD: 1. Heat oven to 200 degrees, line a large baking tray with baking paper 2. Roughly tear kale and pop into a large bowl. Add salt, lemon juice and paprika and using your fingertips, gently massage kale until it begins to soften and turn bright green. 3. Scatter kale on baking tray, ensuring it is in a thin layer - you may need 2 trays! 4. Bake in preheated oven for 10-12 minutes or until kale is nice and crunchy. You may need to shake tray about to crisp up bottom of kale. Serve immediately or just as delicious cold. For an extra zing add a light sprinkle of chilli flakes. Enjoy💚😘 M x
As I detox from all the indulgent food and drink of the holiday season, this burger bowl was perfect for dinner last night. Although the family still love a traditional burger, my deconstructed burger had them all wishing they did the same. To make - simple roll your patties into meatballs, cook up some brown rice, sauté some cherry tomatoes with fennel seeds & a dash of balsamic vinegar, make a dressing by simply combining Greek yogurt with a squeeze of lemon juice & sprinkle of ‘sally’ @mingleseasoning add some fresh cucumber slices, some crumbled feta & shredded lettuce - then tuck in & enjoy. Eating healthy doesn’t have to be boring, in fact the healthier I eat, the more flavour I can pack into my meals. Summer is definitely burger season, so next time burgers on on your family menu, try making my bowl????
