For the Oreo Crust
- 20 Oreos
- 6 tablesp melted Butter
ingredients
For the cheesecake filling
- 2 packages full fat Cream cheese
- 1 large Egg
- 1/3 cup Sugar
- 2 teaspoons Vanilla
- 8 crushed Oreos
Method
To Make the Oreo Crust
Step 1
Preheat the oven to 375°. Prepare a 8x8 inch baking pan by lining it with parchment paper.
Step 2
In a food processor, add 20 Oreos. Pulse until the Oreos are pulverized and the mixture looks like sand (about 1 minute). Add the melted butter and pulse 5 more times until the mixture is completely combined.
Step 3
Add the crumbs to the prepared 8x8 inch pan. Pat the crumbs down evenly and bake the crust for 8 minutes. After 8 minutes, take out the pan and allow it to cool slightly.
To Make the Cheesecake Bars
Step 1
In a large bowl, add the cream cheese, eggs, sugar, and vanilla. With a hand mixer, mix well until fully combined.
Step 2
Add 8 Oreos to a Ziploc bag and with a rolling pin, crush the Oreos into crumbs. Add the crumbs to the cream cheese mixture and mix to combine.
Step 3
Add the cream cheese mixture to the Oreo crust and spread it out evenly. Place the pan in the oven and bake for 25 minutes or until the bars are just slightly browned and there is no wobble left in the bars. Allow the bars to cool completely before cutting.
