Another shot of these fluffy vegan pancakes! Me and my sister smashed another stack of these for breakfast this morning ? ? topped with @coconutcollab coconut yoghurt, blueberries and maple syrup. We had a mammoth cooking day today intertwined with a gorgeous sunny forest walk and lots of baby time ☺️ Lots more recipes to come! Ingredients: •1 cup plain gf flour •2 tsp coconut sugar •2 tsp baking powder •1 cup water •1 tbsp oil Method: 1️⃣ Sift the flour and baking powder into a large bowl. Add the sugar and mix. 2️⃣ Whisk the water and oil together in a small bowl. Make a well in the centre of the dry ingredients, and pour in the wet. Stir gently until blended. Use a whisk to then beat the batter to remove lumps. 3️⃣ Heat a little oil over a pan, ladle in the batter and use the back of the ladle to spread the batter out. 4️⃣ Cook until bubbles form and then flip and cook until browned on other side. 5️⃣ Add toppings of your choice and enjoy! I made a big batch of batter to keep in the fridge for our breakfast over the next couple of mornings ☺️ #plantbased #dairyfree #glutenfree #veganuary #vegan

This Christmas we decided against the traditional vegetarian-option nut roast, which we have done for the last 3 years of my vegetarianism. And this year we searched for something different! We came across an amazing looking recipe by @sophonaplate…a fully vegan, gluten-free Christmas Wreath! Packed with tofu, spinach and pine nuts ? I have tweaked the recipe slightly...and it was by far the best Christmas dinner I’ve had! Xmas eve = a baking day! This is gingerbread baking in the making ? vegan, gluten free and refined sugar free! I’ve made these 3 years in a row now, tweaking the recipe each time ... and I feel like I’ve finally cracked it!! And here it is: Ingredients: •2 cups ground almonds •1/2 cup pitted dates roughly chopped •1 tsp ground cinnamon •1/4 tsp ground nutmeg •2 1/2 tsp ground ginger •1/2 tsp baking powder •2 tbsp coconut oil, melted •2 tbsp agave nectar or vegan sweetener Method: 1️⃣ combine ground almonds, dates and spices in a food processor. Process until mixture is crumbly. 2️⃣ pour into a mixing bowl and add oil and agave. Mix until a soft dough forms. 3️⃣ roll the dough between 2 pieces of baking paper until 3mm thick. Refrigerate for 1 hour to allow the dough to firm up. If in a hurry, place in the freezer for 20 mins. 4️⃣ cut into shapes, decorate with nuts, seeds or currants and place cookies onto a lined baking tray. Bake at 150•C for 20 mins or until golden brown. Remove from oven and cool. #plantbased #dairyfree #healthyliving #glutenfree #veganchristmas
