ingredients
- 4 lbs cleaned and debearded mussels
- 8 tomatoes peeled and deseeded tomatoes
- 4 tablepsoon olive oil
- 4 ounces fresh chouriço
- 1 diced onion
- 1 diced green pepper
- 3 tablespoons flour
- 4 cups white wine
- parsley
Method
Step 1
Heat oil in a saucepan over a medium low heat.
Step 2
Add chouriço and sweat gently until the red oil is released from the sausage.
Step 3
Add onion and garlic, and cook until soft.
Step 4
Add the diced green pepper and jalapeños, and sauté for a couple of minutes.
Step 5
Stir in the flour and cook for a few more minutes.
Step 6
Add wine and stir until mixture has thickened.
Step 7
Add mussels and cover the pot with a lid. Steam mussels until they have all opened.
Step 8
Stir in tomatoes and parsley. Add salt and pepper if necessary.
Step 9
Serve with a spoon and crusty bread or garlic bread to soak up the broth.
