ingredients

  • 2 Slices Whole Wheat Bread
  • 1/4 Cup Fresh Spinach
  • 1/4 Cup Mashed Sweet Potato (optional)
  • 2 Cups Cooked Chickpeas
  • 1/2 Cup Diced Celery
  • 1/2 Cup Diced Red Bell Pepper
  • 1/2 Cup Vegan Mayonnaise
  • 1 Tablespoon Fresh Chopped Dill
  • Salt, Pepper, & Garlic Powder to taste.

Method

  • Step 1

    Mash the Chickpeas with a potato masher or large fork.

  • Step 2

    Add the Celery, Onion, Red Bell Pepper, Mayo, and Spices.

  • Step 3

    Mix to combine well.

  • Step 4

    Layer on the bread with sweet potato, greens, and anything else of your choice. Cut in half, and Enjoy!
