ingredients
- 2 Slices Whole Wheat Bread
- 1/4 Cup Fresh Spinach
- 1/4 Cup Mashed Sweet Potato (optional)
- 2 Cups Cooked Chickpeas
- 1/2 Cup Diced Celery
- 1/2 Cup Diced Red Bell Pepper
- 1/2 Cup Vegan Mayonnaise
- 1 Tablespoon Fresh Chopped Dill
- Salt, Pepper, & Garlic Powder to taste.
Method
Step 1
Mash the Chickpeas with a potato masher or large fork.
Step 2
Add the Celery, Onion, Red Bell Pepper, Mayo, and Spices.
Step 3
Mix to combine well.
Step 4
Layer on the bread with sweet potato, greens, and anything else of your choice. Cut in half, and Enjoy!
