ingredients

  • 4 cups old fashioned oats
  • 1/4 teaspoon cinnamon
  • 1/4 cup cacao powder
  • 2 tablespoons whole wheat flour
  • 1/2 teaspoon sea salt, divided
  • 1/3 cup almond butter
  • 1/3 cup coconut oil, melted
  • 1/2 cup honey
  • 2 teaspoons vanilla extract
  • 1/3 cup mini chocolate chips

Method

  • Step 1

    Line 12x18” baking sheet with parchment paper, set aside. Preheat oven to 325* F.

  • Step 2

    Combine oats, cinnamon, cacao powder, flour and ¼ tsp sea salt in a large bowl and mix together with a wooden spoon or rubber spatula.

  • Step 3

    Add almond butter, melted coconut oil, honey and vanilla to the oat mixture and mix well until fully incorporated.

  • Step 4

    Dump granola onto a parchment lined baking sheet and spread out evenly. Firmly press down granola into the baking sheet with the back of a wooden spoon or rubber spatula.

  • Step 5

    Place the baking sheet in the oven on the 2nd from the bottom rack and bake for 18-20 minutes. Check during the last few minutes to make sure granola doesn’t burn.

  • Step 6

    After baking, immediately sprinkle mini chocolate chips and the remaining ¼ tsp sea salt onto granola and let the granola cool on the baking sheet for about 30 mins.

  • Step 7

    Once the granola is cooled, break apart into chunks with your fingers and store in an airtight container at room temperature. Enjoy!

  • Step 8

    *Variations: Add ¼ - ⅓ cup coconut sugar for sweeter taste. Use peanut butter instead of almond butter. Add ½-1 cup flaked coconut or your favorite nuts. Use maple syrup instead of honey.
