  • 1/3 cup Greek yogurt
  • 1 large egg
  • 1 tablespoon honey, plus more for drizzling (optional)
  • 1/2 teaspoon vanilla extract
  • 2 slices of brioche bread
  • Sliced strawberries and blueberries, for topping
  • Powdered sugar (optional), for dusting

Method

  • Step 1

    In a bowl, combine the Greek yogurt, egg, honey, and vanilla extract. Whisk until smooth and well blended.

  • Step 2

    Use the back of a spoon to press into each slice of brioche bread, creating a small well in the center.

  • Step 3

    Spoon the yogurt mixture into the wells of the brioche slices. Top with sliced strawberries and blueberries.

  • Step 4

    Preheat an air fryer to 390°F. Place the prepared brioche slices in the air fryer basket and cook for 6 minutes, or until the edges are golden and crisp.

  • Step 5

    Once cooked, remove the toast from the air fryer. Dust with icing sugar and drizzle with extra honey if desired.
