Dry Ingredients
- 2 cup Multigrain flour/Whole wheat flour
- 1 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoon Cinnamon powder
- 1/4 teaspoon Nutmeg Powder
- 2 tablespoons Chia seed powder
- 1/4 teaspoon Salt
- 2 small Fuji apples

- 1/4 cup Vinegar / apple cider vinegar
- 3/4 cup Canola oil
- 1/2 cup Milk (dairy/non-dairy)
- 1 teaspoons Vanilla Extract
- 2 teaspoons Lemon juice
- 6 tablespoons room temperature Water
Method
Step 1
Grease bread loaf tin with cooking spray or oil and line it with parchment paper.
Step 2
In a small serving bowl add chia ground and water keep it aside that chia egg used instead of eggs .
Step 3
In medium size bowl sieve together flour ,baking powder, baking soda, salt cinnamon powder, nutmeg powder and mix it well.
Step 4
Heat a sauce pan in low flame and peel and cut apple into small chunks keep aside few chunks for topping .cook it for about 5 min in low heat to remove extra moisture from the apples. After removing pan from flame add lemon juice and mix it well
Step 5
Preheat the oven at 200 degree Celsius. In a large mixing bowl add chia egg , canola oil , vinegar and jaggery and whisk it for about 5 min with help of hand whisk or 2-3 min if using hand blender.
Step 6
Now add dry ingredients and apple mixture alternately into large bowl mix it well until they well combine don't over mix the batter.
Step 7
Transfer the batter in loaf tin spread it evenly add remaining apple chunks on the top press it gently with help of spatula.
Step 8
Now place the tin in middle rack and bake it for about 40-50min at 180 degree Celsius . Once the cake is done take out and put toothpick in centre to check if it come out clean unless bake it for again 10 min.
