ingredients

  • 1/2 lb flaky white fish
  • Kosher Salt, to taste.
  • Black Pepper, to taste.
  • 1/2 teaspoon granulated garlic
  • 2 juice limes, divided
  • 1 ripe mango, cubed
  • 1 seeded and chopped red bell pepper
  • 1/2 red onion, diced
  • 1 (14.5 oz) can Red Gold Canned Petite Diced Tomatoes
  • 1/4 cup fresh cilantro, chopped plus more for garnish
  • 4 tortillas, warmed for serving
  • 1/2 cup shredded cabbage

Method

To prepare the fish:

  • Step 1

    Preheat the oven to 400 degrees.

  • Step 2

    Add fish to a sheet pan lined with foil. Season generously with salt and pepper. Add granulated garlic and juice of one lime.

  • Step 3

    Bake at 400 F for 15-20 minutes.

To make the mango salsa:

  • Step 1

    Combine mango, red bell pepper, and red onion to a bowl. Add @redgoldtomatoes petite diced tomatoes and chopped cilantro, stir to combine. Season with salt and pepper, and remaining lime juice. Note: It’s recommend making this ahead of time and storing in the fridge until ready to serve.

To assemble tortillas:

  • Step 1

    Add shredded cabbage to the base to base of tortilla. Top fish, followed by the @redgoldtomatoes mango salsa. Garnish with cilantro.
