INGREDIENTS70g buckwheat flour 20g rice flour 30g ground almonds 90g sugar 1 tsp baking powder 1/2 tsp salt 1 egg 3 tbsp milk 3 tbsp plain yogurt 1 tbsp extra virgin olive oil Zest of 1 lemon and 2 limes 100g white chocolate, chopped 1 tsp butter Lemon and lime zest plus anything else to sprinkle on top. DIRECTIONS In a large bowl, whisk together the flours, ground almonds, sugar, baking powder and salt. In a separate bowl, whisk together the egg, milk, yogurt, olive oil and zest until smooth. Fold the wet ingredients into the dry ingredients and set the batter aside for half an hour. Preheat the oven to 180C/350F and grease a doughnut pan with olive oil or melted butter. Fill each hole up to just below the top and bake for 8 - 10 mins until golden brown. Remove from the oven and allow to cool on a wire rack. To make the glaze, gently melt the white chocolate in a bowl over a pan of simmering water. When it's melted, take it off the heat and stir in the butter. Spoon the glaze on top of the cooled doughnuts and sprinkle with toppings.
