Falafel Pita Sandwich with Herb Hummus Dressing
Today I am bringing you this super easy Falafel Pita Sandwich with an herb hummus dressing! Is this even a vegan food blog if I don’t have a falafel recipe? OK, I will be honest… falafel isn’t my favorite food to make. Maybe this is just me being incredibly lazy but I click out of recipes that say I need to use dried and soaked chickpeas. I completely understand why you want to use dried chickpeas, I’ve read numerous articles on it, trust me. If you have that kind of commitment and time, go for it. But I’m hungry for some falafel and I want it in the next 30 minutes. So, if you’re anything like me… this is the recipe for you! This falafel pita sandwich is made with simple ingredients, quick to prepare, and is super delicious. A common problem when using canned chickpeas for falafel is that it will be too mushy or wet in the center but not with this recipe. I’m positive you’ll love this Falafel Pita Sandwich!
