There is nothing better than cocktail and food pairing that’s easy to prepare, yet delivers big flavor. This sparkling pear whiskey cocktail hits all the best flavor notes of fall, sweet pear, herbaceous rosemary, the bite of bubbly Prosecco, and lightly smokey Tincup Whiskey that’s aged for a minimum of four years in charred oak barrels. A pinch of sea salt and sugar help to round out the flavor of the cocktail, but feel free to adjust based on your preferences. Using store-bought pizza dough is one of the best host gifts you can give yourself. Wrap the dough around a cube of mozzarella cheese and roll into a ball, then brush with a garlicky, herby, sweet-and-savory honey butter you’re going to want to spread on everything.

For the Sparkling Pear Whiskey Cocktail

  • Ice
  • 2 parts TINCUP® Original Whiskey
  • 4 parts cold pear juice or pear nectar
  • Pinch of sea salt
  • Pinch of granulated sugar, plus more to taste
  • 6 parts chilled Prosecco
  • Splash of cold sparkling water
  • 2 fresh rosemary sprigs

Method

  • Step 1

    Add ice to a pitcher or large jar. Pour two shots of TINCUP® Original Whiskey up to the top line on the tin cup provided with the bottle (this is what we are referring to as “parts”) over the ice, followed by 4 parts pear juice or pear nectar, sea salt, and sugar, if using. Stir well. Strain half of the pear mixture over ice into two medium cocktail glasses (a double old fashioned glass works well). Top each glass with 2-3 parts Prosecco, to taste, and a splash of sparkling water. Garnish each glass with a fresh rosemary sprig to stir while drinking and provide an earthy aroma to the cocktail.

For the Cheesy Herb Bread Bites

  • 16 ounces prepared pizza dough
  • Flour, for dusting
  • 8 ounces low-moisture mozzarella cheese, cut into 1” cubes
  • 6 tablespoons unsalted butter
  • 1 tablespoon honey or maple syrup
  • 4 garlic cloves, smashed and peeled
  • 1/4 cup fresh chopped herbs (such as thyme, sage, rosemary, or a combination)
  • Flakey sea salt
  • Black pepper

  • Step 1

    Roll pizza dough into a tight ball and sprinkle with flour until evenly coated to prevent it from sticking. Cover with a medium bowl or plastic wrap and let rise at warm room temperature (about 75F degrees) for 1 hour.

  • Step 2

    Meanwhile, melt butter in a medium pan. Add honey, smashed garlic, chopped herbs, flakey sea salt, and a few grinds of black pepper and let infuse over low heat until ready to use.

  • Step 3

    Line a skillet with parchment paper and brush with some garlic herb butter.

  • Step 4

    Cut pizza dough into 1 ½ -inch pieces (or 15 grams). Flatten each piece and place a cube of mozzarella cheese in the center. Tuck each corner of dough into the center, then roll between your hands to make a ball and encase the cheese. Transfer to prepared pan and repeat with remaining dough and cheese. Cover loosely and let rise for 30 minutes.

  • Step 5

    Meanwhile, preheat the oven to 375F degrees.

  • Step 6

    Brush dough with garlic herb butter, then bake for about 25-30 minutes or until dough is golden brown and sounds hollow when tapped with a finger or butter knife. Brush with more garlic herb butter and let sit at room temperature for about 10 minutes before serving.
