These delicious grilled grape skewers with halloumi are sure to become your favorite easy summer appetizer! I am a huge fan of roasted grapes and decided to put a little spin on the cozy roasted chicken with grapes that I make in the fall and winter months. If you aren't familiar with halloumi cheese, it is a firm, salty cheese from Cyprus that is usually made from sheep or cow's milk (or a combination). The firm texture is perfect for grilling or pan-frying. Make sure to choose sturdy sprigs of rosemary that can withstand the weight of the ingredients and hold up on the grill. The hydroponic varieties often sold as "living rosemary" are not suitable for this preparation. I love to use up any leftover skewers by removing the rosemary sprig and topping a salad with them. Note: If you aren't a fan of olives, don't let that stop you from making this recipe! Simply omit the olives and add an extra grape in their place.

  • 2 lemons
  • 12 sturdy rosemary sprigs
  • 1 (8.8-ounce) package halloumi cheese, cut into 1 inch cubes
  • 1 small bunch red or black seedless grapes
  • 1 cup Castelvetrano or cerignola olives
  • 1 garlic clove, finely chopped or grated
  • Olive oil
  • Flaky sea salt, plus more for finishing
  • Black pepper

Method

  • Step 1

    Slice 1 1/2 of the lemons very thinly and remove any seeds. Squeeze the remaining half into a small bowl.

  • Step 2

    Strip the rosemary leaves off the sprigs, leaving about 1” at the top. Finely chop 1 tablespoon of the rosemary leaves and add to the bowl with the lemon juice. Finely chop or grate the garlic clove and add to the bowl along with a few tablespoons of olive oil and fresh cracked black pepper. Set aside.

  • Step 3

    Preheat a grill to medium-high heat for 10 minutes.

  • Step 4

    Meanwhile, assemble each skewer with a few grapes, 1-2 cubes of halloumi, some lemon slices, and olives, if using.

  • Step 5

    Drizzle the skewers with olive oil and season with a pinch of flaky sea salt.

  • Step 6

    Brush and lightly grease the grill grates with neutral oil.

  • Step 7

    Grill the skewers for about 4 minutes, then turn and grill for an additional 1-2 minutes.

  • Step 8

    Transfer the skewers to a platter and sprinkle with flaky sea salt. Drizzle the dressing overtop.

  • Step 9

    Serve grilled grape and halloumi skewers warm or at room temperature.
