ingredients

  • 1 quart plain full-fat Greek yogurt
  • 1/2 cup honey or maple syrup
  • 2/3 cup lightly salted shelled pistachios
  • 1 tablespoon vanilla bean paste or vanilla extract
  • 2 (6-ounce) packages Driscoll's blackberries

Method

  • Step 1

Line two baking sheets with parchment paper. Clear space in your freezer for baking sheets.

  • Step 2

Add Greek yogurt, honey, 1/3 cup pistachios, and vanilla bean paste or vanilla extract to a high-speed blender. Blend on high until completely smooth, about 45 seconds. Remove all but 2 cups yogurt mixture and set it aside.

  • Step 3

Blend 2/3 cup Driscoll's blackberries with yogurt mixture on high speed until completely smooth.

  • Step 4

Spread white yogurt mixture in an even layer about 1/4" thick onto one prepared baking sheet, reserving about 1/2 cup if desired to alternate colors. Spoon 1-teaspoon sized dollops blackberry yogurt mixture over the surface, then swirl in desired pattern using a toothpick or cake tester. Sprinkle with more Driscoll's blackberries and more pistachios.

  • Step 5

Repeat process, using remaining blackberry yogurt mixture onto second prepared baking sheet, topping with 1-teaspoon sized dollops reserved white yogurt mixture. Sprinkle with remaining Driscoll's blackberries and pistachios.

  • Step 6

Freeze baking sheets for at least 3 hours before breaking bark into shards and transferring into an airtight container. Store in the freezer for about a month.
