Did you know you can make ice cream with just 1 ingredient? One of my favorite food trends of the past decade has got to be banana nice cream. The mix-ins are endless, it’s a healthy treat, and I always have bananas in my house. Freeze sliced or diced bananas until solid, then blitz it in a food processor. It’s that’s simple. This version has clusters of Cascadian Farm Oats & Honey Granola for texture and protein. I love having this granola on hand for quick breakfasts, but now I get to enjoy it with my dessert! Top scoops of nice cream with chocolate magic shell and a sprinkle of more granola.

ingredients
- 5 bananas, peeled, diced, and frozen
- 2 tablespoons milk or non-dairy milk (optional)
- 1/4 cup dark chocolate chips
- 1 teaspoon coconut oil
- 3/4 cup Cascadian Farm Oats & Honey Granola, divided
Method
Step 1
Blitz frozen bananas in a food processor until completely smooth, scraping down the sides as necessary. Stir in ½ cup Cascadian Farm Oats and Honey Granola, then transfer mixture to an airtight container and freeze until solid.
Step 2
Add chocolate chips and coconut oil to a small bowl and melt in the microwave for 45-second bursts. Stir until completely smooth, then let cool slightly.
Step 3
Allow banana nice cream to sit at room temperature for about 10 minutes, then scoop into bowls. Top with a few spoonfuls of the melted chocolate mixture and sprinkle with remaining Cascadian Farm Oats & Honey Granola.
