Serves or Makes: 4-6
- 1/ 2 cantaloupe, scooped with a melon baller
- 5 figs, halved
- 2 ounces prosciutto
- 1 cup mozzarella balls
- Handful basil, chiffonade
- Handful mint
- 1 teaspoon honey
- 1/ 2 tablespoon white balsamic vinegar
- 1 tablespoon olive oil
- 1/ 4 cup chopped pistachios
- Salt and black pepper, to taste
Arrange the melon, figs, prosciutto, mozzarella, and herbs on a platter. Season with salt and pepper.
Whisk the honey, vinegar and olive oil together. Drizzle over the salad, add the pistachios and serve at once.
