Cantaloupe, Fig, Prosciutto and Mozzarella Salad
"A Melon, Mozzarella + Honeyed Fig Caprese salad - another side salad that is perfect for a dinner party, BBQ or any type of get together! ?. I've been loving this salad lately- so light and fresh with the basil + mint.  It's a perfectly delicious pairing to chicken, beef or pasta!  The prosciutto definitely balances the sweetness of the salad, but you could omit it also for a vegetarian version! Cantaloupe and prosciutto are a dynamic Italian duo, perfect for dining al fresco. Sweet figs and creamy mozzarella join the party to create this unforgettable side dish.

Serves or Makes: 4-6


  • 1/ 2 cantaloupe, scooped with a melon baller
  • 5 figs, halved
  • 2 ounces prosciutto
  • 1 cup mozzarella balls
  • Handful basil, chiffonade
  • Handful mint
  • 1 teaspoon honey
  • 1/ 2 tablespoon white balsamic vinegar
  • 1 tablespoon olive oil
  • 1/ 4 cup chopped pistachios
  • Salt and black pepper, to taste


  • Step 1

    Arrange the melon, figs, prosciutto, mozzarella, and herbs on a platter. Season with salt and pepper. 

  • Step 2

    Whisk the honey, vinegar and olive oil together. Drizzle over the salad, add the pistachios and serve at once.
