ingredients

  • 2 cups milk of choice
  • 1/2 cup maple syrup (or raw honey)
  • 1/3 cup nut butter of choice
  • 1 teaspoon vanilla extract
  • 2 cups gluten free rolled oats
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1 tablespoon flax or chia seeds
  • Pinch of salt
  • 1/3 cup dark chocolate chips

Method

  • Step 1

    Preheat the oven to 350°F. Grease or line an 8” x 8” baking dish.

  • Step 2

    In a large mixing bowl, whisk together the milk, maple syrup, nut butter, and vanilla extract in a bowl until smooth.

  • Step 3

    Add in the rolled oats, cocoa powder, baking powder, flax seeds, and salt. Stir until all the ingredients are well combined.

  • Step 4

    Pour the mixture into the prepared baking dish, spreading it evenly. If desired, sprinkle additional dark chocolate chips on top.

  • Step 5

    Bake for 45 minutes or until the top is set and a toothpick inserted into the center comes out clean.

  • Step 6

    Allow the baked oatmeal to cool for a bit before slicing. Enjoy it warm, and feel free to add your favorite toppings or serve with a dollop of yogurt if desired.

    Store any leftovers in an airtight container in the refrigerator.
