Meyer Lemon and Fresh Raspberry Cupcakes! Another combination I absolutely love! Fresh Meyer lemon 🍋 zest and lemon juice really amps up the lemon flavor. We put fresh raspberries in the batter and the frosting. Delicious! 😋
Gluten Free Chai Spice Cupcakes - I never thought about putting spices which are used for making Indian tea (Chai) ☕️ into cupcakes until recently, when a client requested it. Indian tea (Chai) ☕️is primarily made with cardamom, ginger, cinnamon, and cloves. Put these warm spices into a cupcake with Madagascar vanilla & cinnamon frosting & topped with a candied ginger slice and you have a flavor bomb! 😋
Kids wanted pancakes 🥞 this morning so I made these 100% wholegrain olive oil dark chocolate chip pancakes. They turned out so fluffy and delicious. Kids went a little overboard with the chocolate chips but that's what happens when they help cook! 😆😆

Dark Chocolate Peppermint Bark Fudge With Sea Salt
Dark Chocolate Peppermint Bark Fudge with Sea Salt - just in for the holidays & gluten free too! A perfect blend of 70% cacao Belgian Callebaut chocolate, 28% cacao white chocolate & pure peppermint oil. Naturally flavored crushed peppermint bits are swirled into the fudge during its slow cooking process making it delicious & decadent. A sprinkling of Maldon sea salt flakes gives the fudge a perfect balance of sweet and salty!

Using an abundance of Meyer Lemons 🍋 in my garden to make these gorgeous Gluten Free & Vegan Meyer Lemon Cardamom Shortbread Cookies with Meyer Lemon Glaze! Thanks to my new @nordicwareusa stamps I was able to get such beautiful designs on the cookies! 😄
Honey Orange Cardamom French Madeleines - look at these beauties with the ridges and the hump! Oh yes they all got the hump! We combined fresh Navel oranges 🍊, raw organic honey 🍯, fresh ground cardamom and organic coconut oil to create these Madeleines!
I actually made this Dark Chocolate Avocado Pudding for Valentine's Day a few years ago, when I was experimenting using avocados and dark chocolate. I fell in love with them and make them every Valentine's Day! It's super easy to make, tastes decadent and they are gluten free & vegan! One of the reasons it tasted divine is that I used @valrhonausa Guanaja Dark 70% cacao chocolate with Valrhona cacoa powder, and Nielsen Massey's pure Madagascar vanilla. The main thing is to use a very good quality chocolate. Recipe: Serves 4 - 2 ripe Hass avocados - 1/4 cup 70% cacao good quality chocolate chunks, melted & cooled (I used Valrhona Guanaja) - 1/4 cup good quality cocoa (I used Valrhona cocoa) - 1/4 cup + 1 tbsp pure maple syrup) - 1 1/2 tsp pure vanilla extract - 2 to 3 tbsp low fat milk almond milk - Pinch of fine Mediterranean sea salt Put everything in a food processor or blender & blend till very smooth & silky. Spoon into a piping bag with a fancy tip & pipe into bowls or you can directly spoon the pudding into bowls. Chill for about 2 hours to set. Enjoy!
