  • 6 egg yolks
  • 2 whole eggs
  • 1 cup granulated sugar
  • 4 cups whole milk
  • 1 tablespoon vanilla extract
  • 1 to 2 teaspoons nutmeg, adjusted to taste
  • 1 cup Hennessy or brandy (optional)
  • 1 cup heavy cream

Method

  • Step 1

    In a large mixing bowl, whisk together the 6 egg yolks and 2 whole eggs until well combined. Gradually add the sugar and whisk until fully incorporated.

  • Step 2

    In a saucepan over medium heat, bring 4 cups of milk to a low simmer. Stir occasionally to prevent the milk from scorching at the bottom of the pot.

  • Step 3

    Once the milk reaches a low simmer, temper the egg mixture by slowly ladling in ¼ cup of the hot milk while whisking continuously. Repeat this process until all the milk is incorporated into the egg mixture.

  • Step 4

    Pour the egg and milk mixture through a fine mesh strainer (sieve) into a clean bowl to remove any impurities.

  • Step 5

    Stir in the vanilla extract, Hennessy (or brandy), and nutmeg. Mix well and cover the bowl with plastic wrap. Refrigerate for at least 3 hours or overnight to chill and allow the flavors to meld.

  • Step 6

    Before serving, whisk the heavy cream until soft peaks form. Gently fold the whipped cream into the chilled egg nog to add a light, airy texture.
